Why Our Cannabis Infused Chocolate is the Best!

By accurately dosing and blending the cannabis extract into the chocolate, we ensure that each bite is not only scrumptious but also evenly dosed and effective. First, we make high-quality extracts from our own lovingly grown cannabis flowers. We send that extract off to the lab for testing to make sure that it’s safe for our customers, ourselves and our loved ones. Then, we carefully add that extract to the finest quality cocoa butter, making a very concentrated mixture. We send that dosed cocoa butter (which we affectionally call “magicCB”) to the testing facility once again. This time to make sure that we know the exact concentration of cannabinoids we’re working with. Then we carefully and patiently mix together the magicCB with the finest quality dark and light chocolates.

 

Chocolate Making Process

  • Phase 5 Crystals

    Marijuana-infused cocoa butter, just like uninfused cocoa butter can crystalize in six different ways, called phases. The creation of these phases depends upon a variety of factors, but largely it’s dependent upon time and temperature. The crystals we are aiming to create are called phase 5 crystals. A cannabis-infused chocolate bar consisting of phase 5 crystals melts in your mouth and not in your hands. Sound familiar? That’s because the melting point of the phase 5 crystals is just over 87 degrees Fahrenheit. If we let the temp drop below 83 degrees we start to form phase 4 crystals which make for a gooey sticky consistency that crumbles easily.

  • Tempering The Chocolate

    So we heat our cannabis-infused chocolate up above the melting point for phase 6 crystals, then we cool it to just below the crystalization point of phase 4 crystals, then we heat it up again over the melting point of phase 4 crystals … leaving only stage 5 crystals. This is what is called “tempering” chocolate. At this point, we speed up the phase 5 crystalization process by adding in a little properly dosed infused chocolate that “seeds” the melted mixture with plenty of phase 5 crystals for new crystals to build off of.

  • Creating The Mould

    Then we hand-pour our now tempered marijuana-infused chocolate mixture into our moulds, set them on the shaker table to shake out any bubbles and then set them to cool. Later we hand pack them in biodegradable bio plastic wrapping, heat seal them and then sticker them. We’re excited about our next batch of stickers which will be home compostable, and printed with soy ink! We’re so glad the industry for packaging and labelling is providing businesses like Maine Cannabis Exchange with these environmentally friendly options. They are definitely more expensive (often twice the price or more), but we think our planet is worth it!
